Low cholesterol, Low calorie, Low saturated fat, Diet, PEPPERMINT ICECREAM RECIPE
2 1/2 Cups Skim Milk, divided
2 Large Egg Whites
2 Teaspoon Vanilla Extract
Green food coloring to appease the eyes
1 (14 OZ) Can Sweetened Condensed Skim Milk
4 teaspoons peppermint essence or to taste, or to splurge on calories, 2/3 Cup Peppermint Candies (25), crushed
Combine 1 1/4 Cups milk and egg whites in a heavy saucepan over medium heat. Cook until slightly thick and coats the back of a spoon, about 8 minutes. Stir constantly and do not boil. Cool. Combine the egg mixture and 1 1/4 cup milk and the next 3 ingredients in a large bowl. Cover and chill completely. Stir in the crushed candies. Pour into a freezer can; freeze according to manufacturer's instructions. Spoon into a freezer safe container and freeze until firm.
SERVING SIZE= 1/2 Cup, about 1/18th of mixture
