Low cholesterol, Low calorie, Low saturated fat, Diet, Oatmeal-Raisin Cookies Recipe
3/4 cup firmly packed brown sugar
2/3 cup applesauce
1/4 cup granulated sugar
2 large egg whites
1/3 cup skim milk
1 teaspoon vanilla extract
1 1/2 self rising flour
1/2 teaspoon ground nutmeg
1 1/2 cups quick cooking oats
3/4 cup raisins
Cooking spray
Preheat oven to 375 degrees. Beat brown and granulated sugar with applesauce. Add egg whites and beat well. Add milk and vanilla. Add flour and beat well. Stir in the rest of the ingredients. Drop by level tablespoons onto baking sheet coated with cooking spray. Bake at 375 degrees for 9 minutes or until lightly browned. Yield: 3 1/2 dozen cookies.
