Low cholesterol, Low calorie, Low saturated fat, Diet, Early Morning Muffins Recipe12 servings/Serving size: 1 muffin3/4 cup low sugar bran cereal (flakes or nuggets) 1/2 cup applesauce 3/4 cup skim milk 1 Tbsp honey 3 egg whites 1 Tbsp brown sugar 1 cup quick-cooking oats 1/3 cup whole-wheat flour 1/3 cup white flour 1/2 cup currants or raisins 1 tsp vanilla 1 tsp cinnamon 1 tsp baking powder 1. Preheat the oven to 375 degrees. Combine all ingredients and mix until blended. Do not over beat. Pour the batter into 12 nonstick muffin cups and bake for 20 to 25 minutes. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely.
