Low cholesterol, Low calorie, Low saturated fat, Diet, Cinnamon Apple Muffins Recipe

Ingredients:
1-1/2 cups wheat bran flakes cereal with raisins
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/3 cup skim milk
3 tablespoons honey
3 tablespoons vegetable oil
1 apple, peeled, grated

Directions:
Preheat oven to 400-degrees.

Mix the cereal, whole wheat flour, baking powder, cinnamon and salt in a medium mixing bowl.

Whisk the skim milk, honey and oil in a small mixing bowl. Add to the flour mixture, stirring just until moistened.

Stir in the apple.

Fill 12 paper lined muffin cups 3/4 full.

Bake for 25 minutes or until golden brown.

Makes 12 muffins.
